Bologna Salad Sandwich Spread
My friend's mom made this bologna salad spread for our Iowa Teen Club luncheon back in the 1950s. I used to make it for my kids when they were growing up, and they still love it! Sweet relish and eggs round out the flavor of bologna in this simple but delicious spread. Serve it on cocktail toast, or use it in sandwiches. The amount of egg, salad dressing, and relish can be adjusted to taste.
Vegan Veggie Pot Pie
I was craving pot pie one day, so I threw this vegan version together with what I had on hand. It came out more wonderful than I could have imagined and it's even better the second day. I am not a big fan of complicated recipes, so I tried to keep it as simple as possible. I used a bag of organic frozen veggies to cut down on the work (corn, peas, carrots, green beans).
Spicy Canned Salmon Salad Rice Bowl
Canned salmon mixed with rice vinegar, Sriracha, and mayonnaise makes this one spicy salmon salad rice bowl. Fresh cucumbers, quickly marinated in soy sauce, and sliced avocado add some coolness. Feel free to make this bowl your own by adding more ingredients.
