My mother-in-law gave me this hot water pastry recipe as a "no-fail" pastry when I married 20 years ago. Add up to a 1/2 cup more cake flour if necessary.
Ingredients
- 1 cup shortening
- 0.5 cups boiling water
- 2 cups cake flour
- 1 pinch salt
Instructions
-
1
Place shortening into a heat-proof bowl. Pour in boiling water and whip mixture until creamy.
-
2
Mix together flour and salt in a separate bowl. Add flour mixture to shortening mixture. Stir until pastry stops sticking to the sides of the bowl. Refrigerate pastry before rolling it out.

Vegetarian Mushroom Gravy
This gravy is sure to please any vegetarian or even non-vegetarian. It's flavorful, rich, and is as good on turkey or prime rib as it is on a vegetarian meatloaf or mashed potatoes. It can be made in advance, stored in the fridge, and reheated on the stovetop or in the microwave.
Chef John's Easy Apple Pie
This apple pie is not your typical dessert. The filling is caramelized apples held together with a very glossy, just-thick-enough apple syrup.
