My mother-in-law gave me this hot water pastry recipe as a "no-fail" pastry when I married 20 years ago. Add up to a 1/2 cup more cake flour if necessary.
Ingredients
- 1 cup shortening
- 0.5 cups boiling water
- 2 cups cake flour
- 1 pinch salt

Place shortening into a heat-proof bowl. Pour in boiling water and whip mixture until creamy.

Mix together flour and salt in a separate bowl. Add flour mixture to shortening mixture. Stir until pastry stops sticking to the sides of the bowl. Refrigerate pastry before rolling it out.
