My coworker Lori makes this brunch salad and we all absolutely love it! It's quick and easy with absolutely no cooking required. Great during the warm summer months.
Ingredients
- 2 bags baby spinach , 10 ounce
- 2 bananas , sliced
- 12 freshs strawberries , sliced
- 1 can mandarin oranges , 10 ounce
- 0.5 cups dried cranberries
- 0.5 cups pine nuts
- 1 cup poppy seed salad dressing

Gather the ingredients.

Place spinach in a large bowl. Arrange bananas, strawberries, mandarin oranges, cranberries, and pine nuts on top.

This is my vegetarian version of a Mexican breakfast casserole based on items I usually have in my fridge. Since I rarely keep cream or half-and-half, I decided to try cream cheese and was pleased with how it worked out. I think this recipe would lend itself well to different vegetables or adding meat.
Blueberry Pierogi
You've probably heard of savory pierogi—those delicious Polish dumplings—but what about sweet? These blueberry-filled pierogi (babcine pierogi z jagodami) are a unique and fruity after-dinner dessert. Serve pierogi the traditional Polish way: drizzle with melted butter and top with soured cream, then sprinkle with additional sugar and blueberries.
Bacon Balsamic Deviled Eggs
Gourmet deviled eggs with a sweet and savory mix of bacon, onion, and balsamic vinegar. Always requested and always disappear! Can be made with sugar substitute and light mayonnaise with no discernable taste difference.
