Great dark brown sugar icebox cookies my southern Grandma used to make.
Ingredients
- 1 cup butter
- 2 cups packed dark brown sugar
- 2 eggs
- 3.5 cups all-purpose flour
- 0.5 teaspoons salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions

Cream butter, add sugar and cream well. Beat in eggs, then add sifted dry ingredients, vanilla and nuts.

Shape into rolls, wrap in wax paper and freeze or put in refrigerator until firm.

Slice and place about an inch apart on greased cookie sheet. Bake about 12 minutes at 400 degrees F (200 degrees C).

When done, remove from pan at once with a spatula. Store in a covered container and they will remain crisp.

Make dill pickles in a crock! Mix up a simple salt brine, add some spices, and submerge Kirby cucumbers in it for about a week, and you'll get some fairly delicious pickles. I'm pretty sure if you measure your salt right and store the pickles as they're fermenting at an appropriate temperature, you'll get crunchy pickles.
Fresh Fruit Salad
I was looking for a light meal for brunch and decided to toss every type of fruit I had in the house into a yogurt-based salad for lunch. It went over well with my lunch guest who is a fussy eater. My sister actually asked for seconds. The nice thing about this is you make what you need at the time and don't have to bother with leftovers. However, it does keep well for a few days as long as it is refrigerated. Serve in individual dishes with crackers.
