Even kids who don't care for vegetable soup may enjoy this cabbage and smoked sausage soup. It has a delicious flavor. Now that crushed tomatoes with garlic, onion, or basil are available, I sometimes use them. Smoked turkey sausage is great in this recipe, too!
Ingredients
- 1 tablespoon vegetable oil
- 1 onion , chopped
- 1 can crushed tomatoes , 28 ounce
- 3 cups water
- 1 head cabbage , cored and coarsely chopped
- 1 pound smoked sausage , sliced
- 3 carrots , sliced
- 3 stalks celery , sliced
- 1 can red beans , 15 ounce
- 1 can tomato sauce , 8 ounce
- 0.33 cups uncooked long-grain white rice
- 2 cubess chicken bouillon
- 1 bay leaf
- 0.5 teaspoons crushed dried thyme
- salt to taste

Heat vegetable oil in a large pot over medium heat. Add onion; cook until lightly browned. Add crushed tomatoes, water, cabbage, sausage, carrots, celery, beans, tomato sauce, and rice. Add bouillon; stir until dissolved. Season with bay leaf, thyme, and salt. Bring to a boil. Reduce heat to low; cook until vegetables are tender and rice is cooked, at least 1 hour.
