Ingredients
- 4 large eggs
- 4 ounces cooked , shredded chicken breast
- 0.5 cups chopped onion , or more to taste
- 0.5 cups chopped broccoli
- 1 tablespoon coconut aminos
- 0.5 teaspoons garlic powder
- 0.5 teaspoons sea salt
- 0.25 teaspoons ground black pepper
- 2 tablespoons avocado oil , divided
- 1 stalk green onion , green part only
Instructions

Mix together eggs, cooked chicken, onion, broccoli, coconut aminos, garlic powder, salt, and pepper in a bowl.

Heat 1 tablespoon oil in a saute pan over medium-low heat. Add 1/3 of the egg mixture and cook for 2 to 3 minutes. Flip and cook the other side for 2 to 3 minutes. Repeat twice more to cook remaining 2 servings, adding remaining oil as needed.

Garnish servings with green onions.
