Ingredients

  • 4 large eggs
  • 4 ounces cooked , shredded chicken breast
  • 0.5 cups chopped onion , or more to taste
  • 0.5 cups chopped broccoli
  • 1 tablespoon coconut aminos
  • 0.5 teaspoons garlic powder
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons ground black pepper
  • 2 tablespoons avocado oil , divided
  • 1 stalk green onion , green part only

Instructions

    Mix together eggs, cooked chicken, onion, broccoli, coconut aminos, garlic powder, salt, and pepper in a bowl.

    Heat 1 tablespoon oil in a saute pan over medium-low heat. Add 1/3 of the egg mixture and cook for 2 to 3 minutes. Flip and cook the other side for 2 to 3 minutes. Repeat twice more to cook remaining 2 servings, adding remaining oil as needed.

    Garnish servings with green onions.
