A sweet, make-ahead fall or winter breakfast, and a great way to use up day-old foods.
Ingredients
- 2 appless - peeled , cored, and diced
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1 tablespoon ground cinnamon , divided
- 1 teaspoon salt
- 4 eggs
- 0.5 cups half-and-half
- 4 tablespoons cream cheese , softened
- 3 stales cinnamon bagels , cubed
- 0.25 cups chopped pecans , Optional

Grease an 8-inch square baking dish.

Place apples, butter, brown sugar, 1/2 tablespoon cinnamon, and salt into a skillet over medium heat. Saute until sugar bubbles, about 5 minutes. Set aside.

Place eggs, half-and-half, cream cheese, and remaining cinnamon into a blender and blend until smooth.

Scatter cubed bagels, cooked apples, and pecans in the bottom of the prepared baking dish. Pour egg mixture on top, making sure to submerge bagel cubes. Let sit in the refrigerator 8 hours to overnight.

Preheat the oven to 350 degrees F (175 degrees C).

Bake in the preheated oven until no liquid remains, 30 to 40 minutes. Serve hot.

Puerto Rican Mondongo
This simple, nourishing stew of tripe and vegetables is found in innumerable variations throughout Latin America and around the Caribbean. On the islands of Aruba and Curaçao, it is known as sopi mondongo. Cooking Puerto Rican food is a bit similar to Island and Spain cuisine; it has a distinctive flavor combined with foreign influences using native seasonings and ingredients. This tastes exactly like cookie dough, for those of you who 'love' cookie dough! No eggs added, so safe to eat as a snack...well maybe not for your thighs. Excellent to make a little thicker and eat on a spoon or add more cream or milk and make a dip out of it!
Pecan Sour Cream Pound Cake
I won first place with this pecan sour cream pound cake at the Cuyahoga County Fair (Cleveland, Ohio) in 1993. For a nuttier variation, you can substitute 1 cup of the flour with 1 cup of ground pecans.
