The Best Bean and Ham Soup
Legume fans who enjoy 7-bean soup will love this extra beany version made with a dried 15-bean mix. I make this hearty soup using the ham bone from our Easter spiral ham and serve it with corn muffins and fresh fruit. It makes a huge pot of soup, so invite some friends over or just freeze several portions for later use. Remember to soak the beans the night before you make the soup.
Powerhouse African Yam Stew
Protein from split peas, chickpeas, peanut butter, and red lentils. Low-carb from yams. Sooo yummy, nutritious, and cheap. This makes a large batch, but just try to have some left for the freezer. A winner!
Chef John's Pecan Pie Brownies
These pecan pie brownies are just the thing if you've ever been eating pecan pie and thought, "this is great, but I wish that crust was a brownie." Your wish is now a reality. I was sure this experiment was not going to work, but it worked really, really well, and these fudgy brownies with a pecan pie layer baked on top are incredibly delicious.
