This easy tiramisu recipe makes a classic Italian dessert with ladyfingers dipped in coffee liqueur and a sweet mascarpone mixture. I think the layers look beautiful when you make the tiramisu in a glass bowl and dust the top with cocoa powder and chocolate curls.
Ingredients
- 6 eggs yolks
- 1.25 cups white sugar
- 1.25 cups mascarpone cheese

Add mascarpone to whipped yolks. Beat until combined.
-
4
In a separate bowl, whip cream to stiff peaks. Gently fold into yolk mixture and set aside.

Mexican Corn on the Cob (Elote)
Elote is Mexican corn on the cob that's grilled until charred, then smothered in butter, mayonnaise, and crumbled cotija cheese. This recipe was given to me by a Mexican friend of mine. Street vendors there sell their corn made this way. So delicious!
Jumbo Whole Wheat Blueberry Muffins
I received free blueberries recently. I admit I never actually tasted a real one before. Always the boxed muffin kind. I loved them. Recently switched to whole wheat, so I wanted to try a new muffin recipe out. This is the one that not only turned out great, but filling as well. When I was eating it, I was craving eggs. Next time I will have to remember to throw in a fried egg or two on the side. I made 6 jumbo muffins.
