This is a hearty guacamole recipe that my friends request from me whenever we have a gathering! It's chunky and colorful and adds gusto to any Mexican dish! Serve with favorite tortilla chips and enjoy!
Ingredients
- 0.5 reds bell pepper , minced
- 0.5 reds onion , minced
- 2 cloves garlic , minced
- 0.5 cans sweet corn , 15.25 ounce
- 0.5 cans black beans , 15 ounce
- 3 ripes avocados , peeled, pitted and sliced
- 2 tablespoons fresh lime juice
- 0.25 teaspoons salt
- 1 pinch ground black pepper , or to taste
- 0.5 cups chopped fresh cilantro , or more to taste

Stir red bell pepper, red onion, garlic, sweet corn, black beans, and avocado slices together in a large bowl.

Mix lime juice, salt, black pepper, and cilantro into avocado mixture until desired texture is achieved.

The fall weather always serves as inspiration for soup, especially butternut squash soups. I wanted to put a spin on the typical squash soup this time, though.
