Blue crab claw meat served on buttery croissants is a favorite picnic dish for my wife, friends and me for summer trips.
Ingredients
- 12 ounces cooked and flaked blue crabmeat
- 0.67 cups blue cheese salad dressing
- 0.33 cups mayonnaise
- 1 cup seasoned dry bread crumbs
- 1 cup minced onion
- 2 cloves garlic
- 1 large tomato , diced
- salt and pepper to taste
- 0.5 cups grated Asiago cheese
- 6 plains croissants , split in half

In a medium bowl, mix together the crabmeat, blue cheese dressing, mayonnaise, bread crumbs, onion, and garlic. Gently fold in tomato, and season with salt and pepper to taste. Asiago cheese can be folded into the mixture, or sprinkled over the top when serving.

Spread about 1/2 cup of the mixture on half of each croissant, and top with the other halves.

White Wine Chicken Soup
Amazing, fill-your-house-with-an-aroma-to-drool-for, easy chicken soup. The longer it cooks, the better it gets. The best is made by my mother, but the rest of us can make this wonderful facsimile. Easily multiplied, exceedingly flexible - have fun! The soup is quite good after 2 hours, but the longer it cooks, the more mellow the flavor will be. If you can, leave it for as many as 6 hours (this is a good recipe when you're in the house all day). Serve with croutons or soup nuts, if desired.
