Creamy cowboy soup is a hearty, rustic creamy soup with beef, bacon, beans, and potatoes that is perfect for the start of "‘ber season."
Ingredients
- 3 slices bacon
- 2 tablespoons butter
- 2 tablespoons flour
- 0.75 cups evaporated milk
- 1 tablespoon olive oil
- 1 onion
- 1 pound ground beef
- 1 can diced tomatoes with green chilies , 10 ounce
- ounce) can ranch style beans
- 1 can corn , 15 ounce
- 2 cups beef broth
- 2 potatoes
- 0.75 teaspoons granulated garlic
- 0.5 teaspoons ground cumin
- salt and freshly ground black pepper to taste

Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 8 minutes. Drain bacon slices on paper towels; chop when cool enough to handle.

Melt butter in a saucepan over medium heat; whisk in flour. Slowly add evaporated milk, whisking until smooth. Cook until thickened slightly, about 2 minutes; remove from heat.

Add oil to a large pot or Dutch oven; cook onions over medium heat until nearly translucent. Add ground beef, and cook and stir, breaking up chunks with a spatula as it cooks, 5 to 7 minutes. Drain any excess fat.

Add bacon, diced tomatoes with green chiles, beans, and corn. Pour in beef broth and add the diced potatoes. Stir to combine. Add garlic granules, and cumin. Season with salt and pepper.

Bring soup to a boil, then reduce heat to low. Cover; simmer until potatoes are tender; 20 to 30 minutes. Pour evaporated milk mixture into soup; stir to combine. Serve immediately.

Frikadeller (Danish Meatballs)
This frikadeller recipe comes straight from my mother-in-law in Denmark. It's a little labor-intensive, but once you get the hang of it, you'll be addicted! Serve these meatballs warm with a brown sauce, small boiled red potatoes, and sweet and sour cabbage. Better still, double the batch and slice the leftovers for an open-faced toast sandwich with mayonnaise the next day in true Scandinavian fashion!
Verde Chilaquiles
This recipe was something I made up after having some sub-par chilaquiles at my favorite local breakfast place. This is my favorite Mexican breakfast dish and is great for a light dinner as well, serve with refried beans and some pico de gallo and you'll be craving for more! Garnish with more cilantro and sour cream. Great for leftover salsa verde or stale tortilla chips, perfect for a family brunch or other special breakfast occasion.

Try these blended baked oats if your morning oatmeal is starting to get boring! Made with almond milk, egg, and a really ripe banana to add sweetness. It reminds me of a muffin. You can leave out the egg, but it won't be as fluffy.
