Cornbread Muffins
These tender cornbread muffins are so simple to make and taste great because they have real pieces of corn as well as cornmeal. They're very similar to the ones found in a famous down-home cooking restaurant.
Cheeseburger Meatloaf
This cheeseburger meatloaf is extremely juicy, and the potential variety of flavors is as big as your imagination. I've done American cheese with ketchup and mustard, served with dill pickle chips. Another good one might be Swiss cheese and mushroom topping.
Meat Pie, Southern Version
One of my family's favorite comfort foods is the lowly meat pie. Lowly? It's actually full of flavor and, if made right, looks delicious as well. This version has beef and pork, plus a flaky puff pastry crust.
