This is a really easy recipe that can be put together at the last minute. My kids love this dish topped with pure maple syrup, but the toppings you can add are endless!

- 2 tablespoons coconut oil
- 7 eggs
- 1.25 cups unsweetened coconut milk
- 1 cup spelt flour
- 0.5 teaspoons Himalayan pink salt
Instructions

1
Preheat oven to 375 degrees F (190 degrees C). Put coconut oil into a 9x13-inch baking dish.

Grilled Caribbean Chicken Breasts
Here is a Caribbean-inspired chicken recipe to get your creative juices flowing! Chicken breasts marinated in the flavors of the Caribbean islands: citrus, garlic, herbs, and a little hot sauce for spice. Pound Cake with Coconut Oil
Extra-virgin coconut oil is the key to the velvety, smooth texture of this cake. It's moist but with a fine crumb, and every bit as rich as a pound cake should be. Don't expect a coconut taste, it gently disappears into the background.

My twist on a favorite Bahamian-style conch salad, served cold.
