Since the first time I put this together four years ago, it now is a must for all our family gatherings. When I pull it out of the oven, I sprinkle a handful of leftover dark chocolate chips on top.
Ingredients
- 2 prepareds 9-inch pie crusts
- 1.5 cups dark chocolate chips
- 1.5 cups white sugar
- 0.25 cups all-purpose flour
- 0.5 teaspoons salt
- 1 cup buttermilk
- 6 eggs
- 1.5 tablespoons vanilla extract
- 1 cup sliced pecans
Instructions
-
1
Preheat oven to 325 degrees F (165 degrees C). Press pie crusts into two 9-inch pie pans.
-
2
Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
-
3
Mix sugar, flour, and salt together in a bowl.
-
4
Whisk buttermilk, eggs, and vanilla extract in a separate bowl; stir buttermilk mixture into sugar mixture. Slowly pour melted chocolate into mixture, while beating with an electric mixer, until filling is smooth. Pour half the filling into each prepared pie crust. Sprinkle pecans over each pie.
-
5
Bake pies in the preheated oven until cooked through, about 1 hour. Cool for at least 1 hour before serving.

Chocolate Mice
Kids will love these, they are whimsical and fun. Cute chocolate mice rolled in confectioners' sugar or chocolate cookie crumbs are very realistic.
Strawberry-Chocolate Mini Cupcakes with White Chocolate Ganache
I made these for Valentine's Day 2010, during the school week and on a sprained ankle! SUPER easy to do, and delicious! I drew from different recipes all over the net, but changed things up to make them all my own.
Danish Dream Cake
This Danish dream cake is a soft vanilla cake with an easy broiled coconut-caramel icing with a slightly crisp texture that contrasts nicely with the tender cake. For some of us, this cake, also called Lazy Daisy Cake or Lazy Day Cake, was the first cake our grandmothers taught us to make. A serrated knife helps to cut through the topping when slicing the cake.
