No sieve used here! This recipe uses all but the core of the pear, and has a nice texture and taste. Adjust the amount of orange rind to your liking.

- 0.25 cups white sugar
- 0.25 cups granular sucrolose sweetener , such as Splenda®
- 2 teaspoons grated orange zest
- 0.25 teaspoons ground nutmeg
- 0.25 cups orange juice
- 1 envelope unflavored gelatin powder , .25 ounce
Instructions

Stir the sugar, sweetener, orange zest, nutmeg and orange juice into the pot and bring to a boil. Cook, stirring frequently until slightly thickened, about 15 minutes. Remove from the heat and stir in the gelatin until completely dissolved. Ladle into hot sterile jars and seal with lids and rings, or fill freezer containers and freeze if you prefer.

Shredded Pork Fajita Tacos
A very quick and easy recipe. I actually stumbled across this by using leftovers. My family of 7 likes it so much that we have it a few times a month. Even the youngest child can join in the preparation by getting the toppings ready. A wonderful use of any type of leftover meat.
Cranberry Pecan Salad
Raspberry Dijon vinaigrette is savory with cranberries, toasted pecans, red onion, and feta cheese. This cranberry pecan salad is a real crowd-pleaser! You can substitute brie for feta, too.
