Quick and Easy Sautéed Spinach
This sautéed spinach recipe cooks fresh spinach leaves in olive oil with garlic salt and Parmesan cheese for lots of added flavor.
Cauliflower Clam Chowder
This healthier take on clam chowder has fewer calories and less saturated fat than the original. Puréed cauliflower and potatoes keep it creamy while celery leaves and lemon zest balance each bite. Other healthy swaps: turkey bacon and low-sodium chicken broth replace regular bacon and clam juice.
Spicy Zucchini Oatmeal Cookies
I concocted these spicy zucchini oatmeal cookies to use up the abundant zucchini in my garden. I like my oatmeal cookies to have a little jazz, but if you are not a fan of ground cloves, they can be omitted. These not-too-sweet, cake-like cookies are perfect with a cup of coffee or tea.
