My husband is Mexican, and he loves spicy chicken from the supermarket. I was trying to re-create one of the spicy packaged chicken dishes at home; this is what I came up with, and he loves it! It is very spicy, tangy, and easy to make.
Ingredients
- cooking spray
- 4 chickens thighs
- 0.5 cups Mexican-style hot sauce , such as Valentina
- 1 tablespoon paprika
- 1 tablespoon cayenne pepper
- 1 tablespoon brown sugar , or more to taste
Instructions
-
1
Preheat the oven to 400 degrees F (200 degrees C). Grease a small baking dish with cooking spray.
-
2
Place chicken thighs in the prepared baking dish. Stir together hot sauce, paprika, cayenne pepper, and brown sugar in a bowl; pour over chicken thighs. Cover the dish with foil.
-
3
Bake in the preheated oven for 20 minutes. Remove the foil and continue baking until chicken is cooked through and sauce has thickened and started to brown, about 20 more minutes. An instant-read thermometer inserted into the center of a thigh should read at least 165 degrees F (74 degrees C).

Mom's Chicken and Dumplings (Slow Cooker Version)
This is a favorite recipe originally made by my mother with chicken on-the-bone and homemade broth cooked over a stove. I have found I don't have the time to start from scratch and that this version tastes just as good with less fuss! You can substitute freshly cooked chicken, if desired. You can line the slow cooker with a slow cooker liner for easy clean-up.
3-Ingredient Chicken and Waffle Bites
You only need 3 ingredients to get the full chicken and waffle experience with these shortcut chicken and waffle bites. Lightly breaded chicken tenders are dipped in pancake batter, and popped into a waffle iron until they are crisp and golden. Serve with syrup for dipping.
Slow Cooker Pulled Pork
Root beer and pulled pork might not seem like a likely pairing but here it makes all the difference. Topped with your favorite BBQ sauce, it's sure to bring rave reviews.
