My husband is Mexican, and he loves spicy chicken from the supermarket. I was trying to re-create one of the spicy packaged chicken dishes at home; this is what I came up with, and he loves it! It is very spicy, tangy, and easy to make.
Ingredients
- cooking spray
- 4 chickens thighs
- 0.5 cups Mexican-style hot sauce , such as Valentina
- 1 tablespoon paprika
- 1 tablespoon cayenne pepper
- 1 tablespoon brown sugar , or more to taste
Instructions
-
1
Preheat the oven to 400 degrees F (200 degrees C). Grease a small baking dish with cooking spray.
-
2
Place chicken thighs in the prepared baking dish. Stir together hot sauce, paprika, cayenne pepper, and brown sugar in a bowl; pour over chicken thighs. Cover the dish with foil.
-
3
Bake in the preheated oven for 20 minutes. Remove the foil and continue baking until chicken is cooked through and sauce has thickened and started to brown, about 20 more minutes. An instant-read thermometer inserted into the center of a thigh should read at least 165 degrees F (74 degrees C).

Learn how to grill ribs on charcoal fast with this easy recipe. The ribs won't be tough, like smoked ribs, or fall off the bone, like braised ribs. These ribs are done the right way, and I've never had better ribs than this.
Molten Chocolate Cakes with Sugar-Coated Raspberries
These molten chocolate cupcakes are simple and elegant, and they bake in under 10 minutes in a standard cupcake or muffin pan. The best part about these little beauties is that the cake batter is extremely forgiving: You can make it up to six hours before you plan to serve the cakes. Fill the pans with batter and refrigerate, but remember to remove the pan far enough in advance of baking to let the batter return to room temperature. Because they bake for only 8 to 10 minutes, pop these little cakes into the oven as you're clearing the main course dishes and making coffee.
