This is a wonderful egg and hash brown breakfast casserole that will feed many. We have it every year for Christmas brunch. The family will not allow me to make anything else. I pair it with my French toast strata and everyone is full and happy. It's also very easy to increase the portion by putting it into a 9x13-inch dish and just adding extra ingredients.
Ingredients
- 1 package frozen hash brown potatoes , 20 ounce
- 0.33 cups vegetable oil
- 1 package bulk pork breakfast sausage , 12 ounce
- 6 eggs , beaten
- 1 cup sliced fresh mushrooms
- 0.75 cups shredded pepper jack cheese
- 0.75 cups shredded Swiss cheese
- 0.5 cups milk
- 1 tablespoon chopped fresh parsley
- 1 teaspoon garlic salt
- 0.25 teaspoons ground black pepper
- 4 thins slices tomato
- 1.5 teaspoons chopped fresh parsley
Instructions
-
1
Preheat oven to 425 degrees F (220 degrees C).
-
2
Toss potatoes with vegetable oil in a bowl until potatoes are well coated. Press potatoes into a 10-inch pie pan to create a crust.
-
3
Bake potatoes in the preheated oven until golden brown, about 30 minutes. Remove pan from oven and reduce heat to 350 degrees F (175 degrees C).

While potatoes are baking, heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Combine sausage with eggs, mushrooms, pepper jack cheese, Swiss cheese, milk, 1 tablespoon parsley, garlic salt, and black pepper in a large bowl. Pour egg mixture into the prepared potato crust.

Bake in the oven until eggs are set, about 25 minutes. Arrange tomato slices over eggs and sprinkle the remaining 1 1/2 teaspoons parsley on top. Return to the oven and continue baking until tomatoes soften, about 5 minutes more.

Slow Cooker Baby Back Ribs
These slow cooker ribs are the best — they turn out perfect every time! They cook in a crockpot until tender, then are covered with barbeque sauce and finished in the oven for fall-apart ribs. Perfect for during the week as the slow cooker does most of the work!
Burritos with Mexican Chorizo and Potatoes
Great for busy schedules! Spicy Mexican chorizo gets wrapped up burrito-style with onion, garlic, and potatoes. My family likes to top these with sour cream to offset the heat.
Grandma Sony's Slow Cooker Black Beans
My mother-in-law whipped up these slow cooker black beans one day without really paying attention to what she was putting in and served them as a side. I have since had to reverse-engineer them to come up with this slow cooker recipe and found they are extremely versatile. They are excellent in burritos, over rice as a side or main dish, or just as a soup on their own. You can even add cheese to the leftovers to make a great dip for chips!
