I have been making this egg casserole for 13 years, primarily for Christmas brunch gatherings. It includes eggs, bread, cheese and sausage. It also works great with bacon.
Ingredients
- 12 eggs , beaten
- 1.5 pounds ground breakfast sausage
- 16 ounces shredded Cheddar cheese , divided
- 7 slices white bread , torn into pieces
Instructions
-
1
Preheat oven to 350 degrees F (175 degrees C).
-
2
Brown sausage in a large skillet over medium-high heat. Drain off grease, and set aside to cool. Pour the eggs into a lightly greased 9x13 inch baking dish.
-
3
In a separate large bowl, combine the sausage, bread and 12 ounces of the cheese. Mix well and pour this into the egg mixture. Top with the remaining 4 ounces of cheese and cover with foil.
-
4
Bake at 350 degrees F (175 degrees C) for 15 minutes, uncover, and bake until casserole is golden brown and bubbly.

Käsesahnetorte (German Yogurt Mousse Cake)
In Germany, the filling for this classic cake (called Käsesahnetorte) is made with quark but quark is not easy to find in the U.S. and quite pricey. I use Greek yogurt instead, and it tastes just the like the original. The cake needs to set for at least 4 hours in the fridge, and it tastes better on the second day, so I always make it the day before serving.
Butternut Squash Soup with a Kick
This is a great butternut squash soup with a kick recipe that will warm you up in a hurry. It's great any time of year. You can adjust the amounts of jalapeño, ginger, and sour cream to whatever you like. You can vary the amount of sour cream depending on how hot you want the soup to taste.
