Flying back from Hawaii this Thanksgiving - and sat by the nicest couple that shared their snacks and a recipe for fudge to die for! He asked me to call it Fat Pete's Fudge if I got it published in honor of him! Thanks to Fat Pete!
Ingredients
- 0.67 cups butter
- 4.5 cups white sugar
- 1 can evaporated milk , 12 fluid ounce
- 2 jars marshmallow creme , 7 ounce
- 16 ounces chocolate candy , such as Hershey's®
- 2.5 cups milk chocolate chips
- 2 cups peanut butter , Optional

Grease a 9x13-inch baking pan. Set aside.

Bring butter, sugar, and evaporated milk to a boil in a saucepan over medium heat. Boil for 5 to 7 minutes, then remove from heat and quickly stir in the marshmallow cream, chocolate candy, and chocolate chips, until the chocolate has melted and is fully incorporated. Pour chocolate mixture into the prepared baking pan. Dot the top of the fudge with peanut butter. Swirl a knife through the fudge and peanut butter to create a marble effect. Cover and refrigerate until firm, about 1 hour. Cut into squares for serving.

Korean Soft Tofu Stew (Soon Du Bu Jigae)
This is an easy and authentic version of Korean tofu stew. I used to eat this every day at a very popular restaurant. I befriended a woman who worked there and she gave me the recipe. It's very versatile. Small pieces of meat or seafood can be added. It's thick and great in the winter and can be made very mild or very spicy. I've seen some recipes on the internet for this dish that are the American version. They may be good too but this one is authentic.
Red Wine-Marinated Beef Stew
A twist on traditional beef stew--stew meat that is so tender even the most finicky eaters will love! (i.e. kids that don't like meat that is tough to chew...like mine.) The "secret" is the acid from the red wine. It helps to break down the collagen, naturally tenderizing the meat and releasing great flavor! The longer you can marinate the better but a minimum of 3 hours is essential. Enjoy with a good crusty bread and a glass of red!
