This wonderful country-style fried green tomato recipe makes a great side dish for summer.
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 cup crushed saltine crackers
- 2 large eggs , beaten
- 0.5 cups butter , or more as needed
- 5 greens tomatoes , sliced 1/2 inch thick
Instructions

Stir flour, salt, and pepper together in a shallow bowl until well combined. Place crushed crackers in a second shallow bowl. Add beaten eggs to a third bowl.

Melt butter in a large skillet over medium heat.

Dip each tomato slice in egg to coat, then in flour mixture. Dip floured tomato slice back into egg, then press into crushed crackers until evenly coated.

Working in batches, cook tomato slices in hot butter until golden brown on each side, 3 to 5 minutes per side. Add more butter to the skillet as needed. Serve hot.

Spectacular Overnight Slaw Recipe

Easy Shepherd's Pie with Garlic Romano Potatoes
This is an easy shepherd's (cottage) pie topped with wonderful garlic and Romano potatoes. You can change the ingredients to add almost anything you like. Kids love this, and it's even better after sitting for a day. You should have most of the ingredients on hand, so no trips to the grocery are required! You can substitute any cheese for the Romano, as well.
