My mother makes this recipe every winter when her lemon tree had ripe fruit. A wonderful gift for friends and neighbors during the Christmas season.
Ingredients
- 0.25 cups butter , softened
- 0.75 cups white sugar
- 2 eggs
- 2 teaspoons grated lemon peel
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2.5 teaspoons baking powder
- 0.75 cups milk
- 0.5 cups chopped walnuts
- 2 tablespoons white sugar
- 2 teaspoons lemon juice
Instructions
-
1
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 1 9x5 inch loaf pan.
-
2
In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the lemon peel. In a separate bowl, sift together the flour, salt and baking powder.
-
3
Blend the flour mixture into the egg mixture, alternately with the milk; stir just to combine. Fold in the nuts; mixing just enough to evenly combine. Pour batter into prepared loaf pan.
-
4
Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean.
-
5
In a small bowl, dissolve 2 tablespoons sugar in the lemon juice. After loaf has cooled for 10 minutes, spoon glaze over loaf.

Southern Ham and Brown Beans
This Southern pinto beans recipe with ham is the same one my mother's side of the family has been making for years, but I've added my own special touch. This recipe is also very good with diced ham and a can of chopped green chiles added. Serve it with cornbread, fried potatoes, and fried cabbage.
Mom's Au Gratin Potatoes

Reduced Fat and Cholesterol Red Velvet Cake
I made some alterations for this wonderful and rich Southern favorite! This cake has all the flavor and richness of a traditional red velvet cake, but you won't feel guilty while enjoying it! With the use of whole wheat flour instead of all-purpose, you are getting fiber and dessert in one! The frosting that goes with this cake is equally delicious and almost guilt free! This cake is delicious!
