Chef John's Paper Pork Shoulder
This 'paper pork' was inspired by a technique for smoking beef brisket that involves wrapping the meat in parchment paper after a certain point in the cooking process, in an effort to keep the meat moist and succulent. I decided to try it for an oven-roasted pork shoulder, wrapping it from the beginning, and it came out so perfectly tender and juicy, I've been doing it that way ever since.
Crockpot Chicken Chili
This slow cooker chicken chili is very flavorful. My family love it when the weather gets cold because they know this cozy chili will be on the menu! Serve with tortilla chips, sliced avocado, and shredded cheese.
Honey Glazed Ham
This honey glazed ham tastes very much like the famous honey baked ham but costs much less, and there's no need to fight the crowds at holiday time. You can even buy the ham presliced to make it easier and more like the original. It is very good. I make this while preparing the rest of the meal in the kitchen so that I don't forget to baste!
