This super-easy zucchini bread is so moist and chocolaty that it's easy to forget it's made with zucchini. Even my husband, who isn't usually a fan of zucchini, absolutely loves it!

Ingredients

  • 2.5 cups all-purpose flour
  • 0.25 cups cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons baking powder
  • 1.75 cups white sugar
  • 0.5 cups unsalted butter , softened
  • 0.5 cups vegetable oil
  • 1 teaspoon vanilla extract
  • 1 package semisweet chocolate chips , 12 ounce
  • 2 cups grated unpeeled zucchini
  • 1 cup chopped walnuts , Optional

Instructions

  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two loaf pans.

  2. 2

Combine flour, cocoa, salt, baking soda, cinnamon, and baking powder in a medium bowl and mix together. Set aside.

  3. 3

Cream sugar, butter, oil, and vanilla extract together in a large bowl with an electric mixer until smooth. Add eggs, one at a time, until mixed. Mix dry ingredients slowly into wet ingredients on medium speed until well combined. Fold in chocolate chips, zucchini, and walnuts with a silicone spatula. Pour batter equally into the prepared loaf pans.

  4. 4

Bake in the preheated oven until a toothpick inserted in each loaf comes out clean, 40 to 50 minutes.
