This is my grandma's wonderful recipe for fresh apple cake. It's moist, chock full of apples, and also contains cinnamon, raisins, and chopped walnuts.
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 0.5 teaspoons salt
- 1 cup white sugar
- 1 large egg
- 0.25 cups vegetable oil
- 2 cups peeled and chopped apple
- 0.5 cups chopped walnuts
- 0.5 cups raisins
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a small fluted tube pan.
-
2
Sift flour, baking soda, cinnamon, and salt together in a bowl. Set aside.
-
3
Mix sugar, egg, and oil together in another bowl. Stir in the flour mixture just until combined; fold in apple, walnuts, and raisins.
-
4
Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 1 hour.

Brazo Gitano de Guayaba (Jelly Roll with Guava)
Recipe I've had for over 25 years. In Puerto Rico, the brazo gitano made by Franco in Mayaguez is a favorite. This homemade version may not be an exact duplicate but it is just as good or better, in my opinion. Mix and match the fillings to your taste. Cream cheese along with the fruit of your choice is a favorite of many.
