If you like potato gratins and casseroles, try this unique Greek-inspired recipe. The herbaceous flavor of mint and spinach pairs well with the rich flavor of baked feta cheese.
Ingredients
- 2.5 pounds yukon gold potatoes , peeled and halved
- 8 ounces spinach
- 2 tablespoons water
- 0.25 cups olive oil
- 2 cloves garlic
- 2 tablespoons green onions
- 2 teaspoons lemon zest
- 1.5 teaspoons kosher salt
- 0.5 teaspoons ground black pepper
- cayenne pepper
- 1 large egg
- 6 ounces feta
- 0.25 cups mint leaves
Instructions
-
1
Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until barely tender, about 15 minutes. Drain well and allow to cool to room temperature.
-
2
Meanwhile, add spinach in a dry saucepan over medium-high heat and wilt, turning the entire time with tongs so it doesn't burn, 1 to 2 minutes. Transfer spinach to a high container. Add water, olive oil, peeled garlic, green onions, lemon zest, salt, pepper, cayenne pepper, egg, 1/2 of the feta cheese, and mint leaves. Puree using an immersion blender until well combined.
-
3
Preheat the oven to 400 degrees F (200 degrees C).
-
4
Slice potatoes 1/4-inch thick into a bowl. Pour spinach mixture on top of the sliced potatoes and toss well so each slice is evenly coated. Transfer mixture to a shallow baking dish, smooth out the top, and sprinkle with remaining feta cheese.
-
5
Bake on the center rack in the preheated oven until the edges of the feta start to just turn golden, 35 to 45 minutes. Let rest for 10 minutes before serving.

Mediterranean Meat Pies (Sfeeha)
This savory Lebanese meat pie recipe is a takeoff on one from my Lebanese mother-in-law (who is one of the very best cooks I know). She makes the dough from scratch, but I use puff pastry instead to save time. These little pies are great for an appetizer or as a side dish!
Crispy Air Fryer Cod
This air fryer cod recipe lets you enjoy a Friday night fish fry at home! Tender cod is encrusted with homemade breading and cooked in an air fryer for a guilt-free dinner. I like to serve this with tartar sauce, roasted potatoes, and homemade sweet and sour coleslaw.
Tasty Turkey Meatloaf With Sauce
After looking at many different turkey meatloaf recipes and not liking any one in particular, I decided to create my own! Add Dijon mustard to sauce for an added flavor.
