Paleo Stuffed Cabbage
I love paleo stuffed cabbage rolls, also known as galumpkis, and wanted to share my own version with zucchini, which I also love. I made this recipe for a dinner party, and everyone commented on how delicious and light it was — nobody realized I had swapped rice with cauliflower and zucchini. I was hoping for leftovers, but that was not the case!
Sweet and Sour Cabbage Soup
This hearty sweet and sour cabbage soup is my version of an old favorite Ashkenazi Jewish recipe. I make a stock first, then make the soup. This allows for de-fatting the soup, but you need to make this on two days, so time accordingly. Using savoy cabbage gives the soup superlative texture and flavor.
Boneless Chicken Cacciatore
This boneless chicken cacciatore is a quick and easy dinner option the whole family will enjoy (and they're getting their veggies in! Shhhh... they'll never realize it's good for them!). Serve over egg noodles or any other pasta you like and top with Parmesan cheese.
