Make gyros at home with this tasty Greek-style gyros meat recipe that blends ground lamb and beef with onion, garlic, rosemary, and marjoram. Slice and serve on pita bread with lettuce, red onion, tomatoes, tzatziki sauce, and feta.
Ingredients
- 0.25 cups chopped red onion
- 1 tablespoon minced garlic
- 1 tablespoon dried marjoram
- 1 tablespoon ground dried rosemary
- 2 teaspoons kosher salt
- 0.5 teaspoons freshly ground black pepper
- 1 pound 93%-lean ground beef
- 1 pound ground lamb
Instructions
-
1
Preheat oven to 350 degrees F (175 degrees C).
-
2
Process red onion in a food processor until finely minced. Scoop onion into a piece of cheesecloth and squeeze it to release as much moisture as possible.
-
3
Return onion to the food processor. Add garlic and process until the garlic is well integrated. Blend in marjoram, rosemary, salt, and pepper.
-
4
Gradually blend ground beef and ground lamb with the onion and seasoning mixture by alternately adding small amounts of each meat to the mixture and processing until well incorporated before adding the next batch.
-
5
Firmly pack the meat mixture into a 9x5-inch loaf pan, assuring no air pockets are trapped in the meat.
-
6
Bake in the preheated oven until no longer pink in the center, about 1 hour 15 minutes. An instant-read thermometer inserted into the center should read at least 175 degrees F (80 degrees C).
-
7
Drain grease and slice thinly to serve.

Chicken Salad with Apples, Grapes, and Walnuts
This chicken salad with apples gets extra crunch from walnuts and a subtle sweetness from grapes. I had chicken breasts left over from a BBQ but I couldn't find a recipe I liked, so I played around and came up with this.
Instant Pot® Harissa Hummus
Classic hummus made from dried chickpeas in your Instant Pot® with the kick of harissa, the smoked pepper paste from North Africa. Serve with warm flatbread or veggies. You can even add some to your soups for a twist in flavor. The hummus can be served immediately or refrigerated to help flavors meld.
Chicken Salad Summer Rolls
I love chicken salad sandwiches but every once in a while for a change of pace will do this gluten-free, low-carb summer roll version, which is as fun to make as it is to eat! A basic chicken salad made with leftover chicken is wrapped with crunchy, colorful vegetables inside a flexible rice wrapper and then served alongside a delicious herb aioli. So addicting! This is a great summertime culinary project for kids.
