This is a very easy recipe for a delicious low-sodium pot roast. I make it healthier by omitting the onion soup mix, using low-fat and low-sodium cream of mushroom soup, and adding vegetables!
Ingredients
- 2 , 10.75 ounce
- 1 large onion , chopped
- 3 pounds chuck roast
- 2 cups sliced carrots
- 1 pound small red potatoes
- 0.5 pounds string beans
- 0.25 cups chopped parsley

-
2
Cook on Low for 8 to 9 hours or High for 3 to 4 hours. Add carrots, potatoes, string beans, and parsley 1 1/2 hours before pot roast is done.

Air Fryer Bacon-Wrapped Scallops with Sriracha Mayo
This delicious appetizer is prepared quickly and easily in the air fryer and served with a spicy Sriracha mayo dipping sauce. I use the smaller bay scallops for this. If you are using jumbo scallops, it will require a longer cooking time and longer strips of bacon.
Carrot Cake
This carrot cake recipe with a homemade cream cheese frosting is my favorite, and I have tried many carrot cakes! It's moist, easy to make with grated carrots, and so delicious!
Lavash Cracker Bread
This is identical to the cracker bread sold in large grocery store delis that costs $6 for three big rounds. With this recipe, you can make it for pennies! I love it as an appetizer with melted Harvarti cheese on top, but with the price of the cheese and store-bought lavash, we didn't have it often.
