This is a very easy recipe for a delicious low-sodium pot roast. I make it healthier by omitting the onion soup mix, using low-fat and low-sodium cream of mushroom soup, and adding vegetables!
Ingredients
- 2 cans low-fat , 10.75 ounce
- 1 large onion , chopped
- 3 pounds chuck roast
- 2 cups sliced carrots
- 1 pound small red potatoes
- 0.5 pounds string beans
- 0.25 cups chopped parsley

Mix cream of mushroom soup, chopped onion, and chuck roast in a slow cooker.

Cook on Low for 8 to 9 hours or High for 3 to 4 hours. Add carrots, potatoes, string beans, and parsley 1 1/2 hours before pot roast is done.
