This easy ice cream cake has layers of ice cream sandwiches, hot fudge, caramel, and whipped topping. It was renamed as "The Best Dessert I've Ever Eaten" by my daughter this Memorial Day. My husband doesn't like when I take this dessert to a large gathering because it means he won't have any leftovers!
Ingredients
- 24 vanillas ice cream sandwiches , unwrapped
- 2 containerss whipped topping , 8 ounce
- 1 jar hot fudge ice cream topping , 12 ounce
- 1 jar caramel ice cream topping , 12 ounce
- 0.25 cups chopped pecans , or to taste

Gather the ingredients.

Arrange a layer of ice cream sandwiches in the bottom of a 9x13-inch dish; top with a layer of whipped topping, hot fudge topping, and caramel topping.

Repeat layering with remaining ice cream sandwiches, whipped topping, hot fudge topping, and caramel topping, ending with a top layer of whipped topping. Sprinkle with pecans.

Cover the dish with aluminum foil and freeze until set, about 30 minutes. Slice and serve with your favorite toppings!

Baked Shrimp Scampi
I've probably been making this recipe since I got it from my Mom in about 1985. I have no idea where she got the recipe from. I've been changing it over the years, and now I call it my own. When we started dating back in 1997, my husband would every now and then order shrimp scampi at a restaurant and always regret it afterwards, saying none of them competed with mine. You can vary the amounts of some of the ingredients, like the cayenne and garlic, to suit your taste. That's what I've done here because we like spicy and garlicky. Yum! Serve over angel hair pasta or any pasta of your choosing.
Cast Iron Clam Chowder
We love clam chowder, especially in the cold winter months. I've modified a few different recipes to come up with this one. Whenever I buy nitrite-free bacon, I always save the grease in a glass jar in the refrigerator to use for recipes like these. Serve with sourdough bread!
