This Instant Pot stew recipe is the ultimate, hearty, melt-in-your-mouth comfort food. It's so easy to make in an Instant Pot for a simple midweek dinner.
Ingredients
- 1 tablespoon butter
- 1 pound beef chuck , cut into 1-inch cubes
- 4 Yukons Gold potatoes , cubed
- 1.5 cups mushrooms , halved
- 1 onion , cut into 6 wedges
- 2 carrots , cut into 1/2-inch thick slices
- 2 cloves garlic , minced
- 3 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon tomato paste
- 1 teaspoon salt
- 0.5 teaspoons ground black pepper
- 0.5 teaspoons dried rosemary

Gather all ingredients.

Turn on a multi-functional pressure cooker (such as Instant Pot) and select the Sauté function. Melt butter in the pot. Cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.

Return all beef chuck cubes to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary.

Close and lock the lid. Select Meat/Stew function, according to the manufacturer's instructions; set the timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.

Release pressure using the natural-release method, according to the manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

Dad's New Zealand Mince Stew
Hmmmmm... I'm not sure if it's chili, or stew or a shepherds pie without the crust, but there is nothing like it over some toast on a cold night, rich and hearty, just downright yummy if you ask me. We always experiment a little with our ingredients but it always comes out great. I'm thinking of going and making a pot right now, oh and it's even better the days after you make it, just go ahead and microwave some, put it on baked potatoes, roll it up in bread, use it anyway you like.
Beef and Cabbage Stew
This cabbage stew with tender beef and potatoes is a very good recipe. My 93-year-old mother-in-law has recently told me that this is the best meal I have ever brought her, and there have been many. All the veggie prep can be done while the onions and bay leaves are simmering. I do add more broth when the veggies go in. The cabbage will add a significant amount of water but the beef flavor is key.
