This delicious soba noodle stir-fry with mushrooms, carrots, bell pepper, and garlic cooks in the Instant Pot, and is vegetarian and vegan.
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon sesame oil
- 5 cloves garlic , minced
- 1 cup sliced cremini mushrooms
- 2 medium carrots , julienned
- 1 medium red bell pepper , seeded and chopped
- 2 tablespoons tamari
- 1 package dried soba noodles , 10.5 ounce
- 2.25 cups water , or as needed
- 1 green onion , finely chopped
Instructions
-
1
Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. When Instant Pot displays hot, add olive oil and sesame oil. Add garlic and cook until fragrant, about 1 minute. Stir in mushrooms, carrots, and pepper; toss to combine. Cook until softened, 2 to 3 minutes.
-
2
Push vegetables to the outside of the pot, forming an empty circle in the center. Add tamari and soba noodles to the pot and enough water so noodles are just covered. Cancel Saute mode.
-
3
Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 6 minutes. Allow 10 to 15 minutes for pressure to build.
-
4
Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Mix sauce, noodles and vegetables together using tongs. Sprinkle with chopped green onion and serve immediately.

Newfoundland Jigg's Dinner
Jigg's dinner is a traditional Newfoundland meal, comparable to corned beef and cabbage. Newfoundland is Canada's easternmost province and is also an island in the Atlantic. Make sure that the split peas are securely tied into a cloth bag (pudding bag), a dish towel, or cheesecloth. If they escape you will not have dinner — you will have pea soup!
Plum Muffins
These plum muffins, made with fresh chopped plums, almonds, and a sprinkle of candied ginger on top, are sweet-tart, moist, and delicious, a great way to enjoy plum season. Enjoy with a cup of coffee or tea in the morning, or with a glass of milk for an afternoon snack.
Korean Spicy Chicken and Potato (Tak Toritang)
A very easy meal to make! Chicken drumettes, potato, carrots, and onion simmer in a spicy sauce that goes best with white rice. You can find Korean hot pepper paste in a Korean/Asian market. I haven't tried looking in a grocery store. Its Korean name is 'gochujang'. Serve with hot cooked rice.
