Ingredients
- 3 pounds ground pork
- 1 tablespoon molasses
- 1 tablespoon kosher salt
- 2 teaspoons ground black pepper , or to taste
- 1.5 teaspoons dried sage
- 1.5 teaspoons dried thyme
- 1 teaspoon red pepper flakes , Optional
- 1 teaspoon onion powder
- 1 teaspoon chopped fresh parsley
- 0.75 teaspoons ground nutmeg
- 0.5 teaspoons fennel seeds
- 0.5 teaspoons ground cayenne
- 0.5 teaspoons ground allspice

Combine pork, molasses, salt, black pepper, sage, thyme, red pepper flakes, onion powder, parsley, nutmeg, fennel seeds, cayenne, and allspice in a large bowl; mix well by hand.

Divide pork mixture into 16 portions; shape into patties 1/4-inch thick.

Heat a nonstick skillet over medium heat; pan-fry patties, in batches, until golden and no longer pink in the center, about 5 minutes per side.

Sheboygan Grilled Brats
Growing up on a lake in the Sheboygan area, this was a standard way that the German folks would grill their brats. We always served them on the old-fashioned hard rolls. By finishing them in the beer sauce they just get better and better. Though it's expensive, on special occasions I use a dark beer which is not German at all: Guinness Irish Stout. Around our house, we eat them with ketchup and mustard, and the cooked onions from the brat sauce.
