These lemon peach parfaits not only look amazing, but they are wonderfully cool, sweet, and tangy. Sliced peaches are layered with pound cake and a light lemon sauce in this recipe before being chilled and topped with a dollop of sweetened whipped cream. They will make you want to have dessert first!
Ingredients
- 2 packages frozen sliced peaches , 10 ounce
- 2 tablespoons brown sugar
- 0.25 cups white sugar
- 2 tablespoons all-purpose flour
- 2 teaspoons grated lemon zest
- 0.25 teaspoons salt
- 0.33 cups fresh lemon juice
- 1 cup boiling water
- 2 eggs yolks
- 2 tablespoons butter
- 1 loaf prepared pound cake , 10.75 ounce
- 1 cup sweetened whipped cream

Place peach slices in a large bowl; sprinkle with brown sugar and stir to coat. Set aside.

Stir white sugar, flour, lemon zest, and salt together in a metal bowl; whisk in lemon juice until smooth. Gradually whisk in boiling water.

Whisk egg yolks together in a small bowl; gradually whisk in about ½ cup hot lemon mixture to temper. Whisk yolk mixture into lemon mixture. Set the bowl over a pan of simmering water. Cook, stirring frequently, until mixture is thick enough to coat the back of a metal spoon. Off heat, whisk in butter; set aside.

Place 1 layer pound cake cubes (about ½ cup each) into each parfait glass; top with about 2 tablespoons lemon sauce then ¼ cup peach slices. Repeat layers once more. Top each with 1 tablespoon lemon sauce. Chill in the refrigerator, at least 1 hour. Dollops parfaits with whipped cream before serving.

Cream Cheese Kolacky
Kolacky are delicious cream cheese pastries with a fruit filling. The dough for these cookies is what makes them exceptional. The most popular fillings are peach, apricot, raspberry, and date but you can use whatever you like. This year I'm trying Michigan cherry preserves and cranberry marmalade.
