Baby Kale Sauté
What a tasty way to eat your greens! Baby kale is sautéed with caramelized onions, toasted pine nuts, and golden raisins for a quick, healthy side dish. I often eat this over rice for a main meal. Baby spinach is an easy substitute.
Mediterranean Chickpea Pasta Salad
This Mediterranean chickpea pasta salad recipe is picnic-friendly, vegan, and gluten free. I created this salad for friends who can't eat gluten or dairy. I used produce just harvested from my garden, but you can change-up the vegetables based on what you have on hand. If you're not dairy-free, feta cheese is a great addition.
Colonial Chess Pie
I'm a guy that does almost no cooking, but I can bake this. Turns out good every time. Not for someone on a diet, or with sugar problems. A big hit, with the young and old alike!
