These marshmallow popcorn balls are sweet, crispy, and chewy — everyone's favorite combination! They're easy to make, and the marshmallows make them similar to the crispy rice cereal bars that are so popular.
Ingredients
- cooking spray
- 1 tablespoon vegetable oil
- 0.5 cups popcorn kernels
- 6 tablespoons butter
- 5 cups miniature marshmallows
Instructions
-
1
Grease a 9x13-inch baking dish with cooking spray; set aside.
-
2
Heat oil in a 4-quart saucepan over high heat. Add popcorn kernels to hot oil. Cover the pan and cook until popping ceases, shaking the pot occasionally. Remove from heat and pour popcorn into the prepared dish.
-
3
Melt butter in a medium saucepan over low heat. Cook and stir marshmallows in hot butter until melted. Pour marshmallow mixture over popcorn, then use a spoon to mix thoroughly until evenly coated.
-
4
Allow mixture to cool enough to handle. Spray your hands with cooking spray. Shape popcorn with your hands into 8 equal balls.

Chewy Brown Butter Banana Bread Cookies
These chewy brown butter banana cookies have a flavor reminiscent of banana bread. The cookies will soften as they sit at room temp—so, to help them maintain their chewy texture, keep the extras stored in an airtight container in the fridge.
Wine Fondue
A lovely wine fondue for cooking chicken, rabbit or veal. Dip bite-size pieces of raw meat into the boiling fondue until cooked.
Easy Money Breakfast Burritos
Yummy burritos that are so good that my husband was selling them for a buck apiece at corp school in the Navy. I was making them every night, and we bought a new couch with the money! These freeze really well; just defrost and eat. I also add fresh cooked mushrooms in these on occasion. I do find that these taste better when made ahead of time and eaten at a later time.
