Easy Mochi
Mochi are small, sweet Japanese cakes made with glutinous rice flour (mochiko). They have a soft, chewy outer layer and a deliciously sticky filling made of sweetened red bean paste. Freezing the red bean paste before you use it is optional but it does make the process easier.
Buffalo Chicken Quesadillas
Buffalo chicken quesadillas are an easy way to serve a quick dinner with a lot of flavor! You do not need to use oil or butter to toast each side of the quesadilla, but you can if you like. I prefer a dry heat. Tortillas made with a corn-flour mixture work best. Serve them with either Buffalo sauce, ranch dressing, or sour cream!

Naturally sweet carrot-walnut muffins made with whole wheat flour. Option to add pumpkin, apple, nuts, etc. Cover leftover muffins and store for 2 days at room temperature, for up to 4 days in the refrigerator, or for up to 3 months in the freezer.
