These meringue cookies are baked at a low temperature until perfectly crisp on the outside and sweet and chewy inside. I love to make these for holiday gifts.
Ingredients
- 2 large egg whites
- 0.13 teaspoons salt
- 0.13 teaspoons cream of tartar
- 1 teaspoon vanilla extract
- 0.75 cups white sugar
- 1 cup semisweet chocolate chips , Optional

Preheat the oven to 300 degrees F (150 degrees C). Line cookie sheets with parchment paper.

Beat egg whites, salt, cream of tartar, and vanilla in a clean bowl until soft peaks form. Gradually add sugar while continuing to whip until stiff peaks form, about 5 minutes. Fold in chocolate chips if using.

Drop by heaping teaspoonfuls, one inch apart onto the prepared cookie sheets. Bake in the preheated oven until just lightly browned, about 25 minutes. Cool on baking sheets.
