Migas are normally cooked eggs with fried tortilla strips. I however enjoy a 'deconstructed' version. I cook my eggs with Hatch chiles and onions, stuff a tortilla with the egg mixture, and top them with fried corn tortilla strips.
Ingredients
- 4 large eggs
- 1 tablespoon milk
- salt and freshly ground black pepper to taste
- 1 tablespoon butter
- 1 can Hatch chile peppers , 4 ounce
- 0.25 cups onions , diced
- 6 corns tortillas , 6 inch
- 2 Tortillas , 6 inch
Instructions
-
1
Crack eggs into a bowl and whisk in milk, salt, and pepper. Set aside.
-
2
Melt butter in a skillet over medium heat. Add Hatch chiles and onions. Saute until onions are soft and translucent, 4 to 5 minutes. Add eggs and cook and stir until eggs are set, 3 to 4 minutes.
-
3
Divide eggs between 6 tortillas and top with fried corn tortilla strips.

Bill's Famous Piña Colada
This piña colada is made with three types of rum: dark, amber, and light. It's like a dream in a glass: 25% dessert, 75% tropical vacation, and 100% an adult beverage. You can hear the Pacific Ocean from Omaha, Nebraska if you have one of these in your hand. Enjoy!
Sticky Popcorn
This sticky popcorn made with brown sugar came from a friend, but it's now my children's most requested family-night treat. It's like caramel corn but faster to make and more fun to eat!
