This easy naan veggie pizza is topped with chopped fresh vegetables, herbs, and mozzarella cheese. Use your favorite veggies and cheese if desired. This pizza serves two people if it's the only thing on the menu, or four if you serve a salad on the side.
Ingredients

- 3 tablespoons olive oil , divided, or as needed
- 1 cup sliced fresh mushrooms
- 1 medium tomato , chopped
- 1 medium bell pepper , sliced
- 1 small red onion , chopped
- 1 tablespoon chopped fresh basil , Optional
- 1 tablespoon chopped fresh oregano , Optional
- 0.5 teaspoons red pepper flakes , Optional
- 1 tablespoon finely minced garlic
- 3 cups shredded mozzarella cheese

Preheat the oven to 375 degrees F (190 degrees C).

Place both naan onto a large rimmed baking sheet; brush 1 tablespoon oil over each.

Bake in the preheated oven until lightly toasted, 5 to 10 minutes.

Meanwhile, stir mushrooms, tomato, bell pepper, onion, basil, oregano, and pepper flakes together in a bowl. Stir in garlic and remaining 1 tablespoon oil.

Remove naan from the oven. Spread mozzarella cheese over top, then add vegetable mixture. Return to the oven and bake until cheese is melted and vegetables are cooked through, 10 to 15 minutes.
