A classic Negroni is a triad of equal parts gin, Campari, and sweet vermouth. The sbagliato—Italian for "mistaken"—subs prosecco for the gin for a balanced, pleasantly bitter spritzer.
Ingredients
- 1.5 cups ampari
- 1.5 cups sweet vermouth
- 1 (750- prosecco or other
- 12 oranges twists

Combine Campari and vermouth in a pitcher. Chill for at least 1 hour and up to 24 hours.

Just before serving, add prosecco to the pitcher. Pour into coupe glasses and garnish each cocktail with an orange twist.

Using prosciutto allows for the subtle flavors of this meat to come through without overpowering the wonderful flavor of the scallops.
