This is a wonderful, healthy side dish for summertime. Only make when the grape tomatoes are in season, their flavor is key! Great in the oven or on the grill.
Ingredients
- 1 pound grape tomatoes , halved
- 1 tablespoon olive oil
- 2 cloves garlic , minced
- 5 freshs basil leaves , chopped
- 1 teaspoon chopped fresh thyme
- salt to taste

Preheat oven to 350 degrees F (175 degrees C).

Place tomatoes onto a large square of aluminum foil. Drizzle olive oil over tomatoes and top with garlic, basil, thyme, and salt. Wrap the foil around tomato mixture sealing tightly to keep juices inside.

Bake in the preheated oven until tomatoes are tender, about 30 minutes. Cool slightly.

Maple Shortbread Cookies
When moving and trying to use up leftover items in the refrigerator, I came up with this maple shortbread cookie recipe. Tasty!
Vanilla Cream or Sauce
This is really delicious on its own, but I use it mainly to serve alongside brownies, bread pudding, apple pie, berries, or poached pears. You can either make this as a thicker cream or as a sauce. I love it as a cream for berries, poached pears or brownies and as a sauce over apple pie or bread pudding. Serve chilled over warm or cool desserts or just eat it on its own as a custard.
Spice Cookies
This recipe was my mother's grandmother's recipe. Spicy soft cookies with currants. Originally from England. Enjoy, they won't last long.
