I made this blueberry French toast casserole for Christmas morning brunch. It's perfect to put in the oven and go open presents while it bakes. You can top with syrup or whipped cream or nothing at all. I found several different recipes similar to this one, but none had everything I wanted to do with it, so I thought I'd try to make my own. I think it is a very good start, but please, let me know what you think!

Tangy Rhubarb Salsa
I came up with this rhubarb salsa while trying to figure out what to do with an over-abundance of rhubarb. I'm not fond of sugary, syrupy rhubarb sauces but I love rhubarb and I love salsa, so I figured why not put them together!
Mini Pumpkin Pies
These mini pumpkin pies are fun to make, easy to eat, and who doesn't love eating an entire pie? Made with prepared pie dough and a simple pumpkin filling, these mini pies are a must for Thanksgiving dessert! Dust with powdered sugar or add a swirl of fresh cream on top.
Simple Mexican Rice
A very simple tomato Mexican rice recipe. I can have this in the oven and cooking in one set of ads on the TV. If you don't have chicken stock, use hot water and chicken bouillon.
