Ingredients
- 2 tablespoons almond flour
- 1 tablespoon cacao powder
- 2 teaspoons coconut flour
- 0.5 teaspoons baking powder
- 1 pinch salt
- 1 egg
- 1.5 teaspoons honey
- 1 teaspoon coconut oil
- 0.5 teaspoons vanilla extract
- 1 tablespoon dairy-free dark chocolate chips

Mix almond flour, cacao powder, coconut flour, baking powder, and salt in a microwave-safe mug. Add egg, honey, coconut oil, and vanilla extract; mix well. Stir in chocolate chips.

Cook in the microwave until top puffs up and center is mostly set, about 1 minute.

Zucchini Spice Cake
This zucchini spice recipe is a dense cake reminiscent of carrot cake. I created the dish to make use of a bumper crop of zucchini and to get my kids to eat more fruits and veggies without them knowing it. I frequently add an extra cup of stir-ins โ raisins, flaked coconut, and walnuts or pecans are favorites.
