These brownies bake up gooey, and are a BIG hit with my family and friends! Has been a family recipe for years. I undercook them just a little, and cutting with a plastic knife works well.
Ingredients
- 2 cups white sugar
- 3 eggs
- 1 cup butter , melted
- 2.5 teaspoons vanilla extract
- 1.25 cups all-purpose flour
- 0.75 cups unsweetened cocoa powder
- 0.5 teaspoons baking powder
- 0.25 teaspoons salt
- 1 cup milk chocolate chips
- 2 , 8 ounce
- 0.75 cups creamy peanut butter
- 0.25 cups white sugar
- 1 egg
- 2 tablespoons milk

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

In a large bowl, beat 2 cups sugar and 3 eggs together until foamy. Stir in the butter and vanilla. Combine the flour, cocoa, baking powder and salt; stir into the egg mixture. Stir in the chocolate chips. Reserve one cup of the batter, and spread the rest into the bottom of the prepared pan.

In a medium bowl, beat the cream cheese, peanut butter, 1/4 cup of sugar 1 egg and milk until smooth and creamy. Carefully spread the peanut butter batter over the layer of chocolate batter. Drop reserved chocolate batter, by tablespoonfuls onto the peanut butter layer. Cut through the batter with a knife to swirl.

Bake for 35 to 40 minutes in the preheated oven, or until brownies are set when shaken gently. Cool completely before cutting into bars. Refrigerate until serving.

Peanut Butter and Apple Sandwich
My kids love to spread peanut butter on their apples, so one day I thought I would take a favorite of theirs and just tweak it a little bit....voila, a peanut butter and apple sandwich. PB and J can get boring after a while and this provides a healthy alternative.

Gnudi (Ricotta Gnocchi)
I've made potato-basil gnocchi before and successfully frozen it but thought I'd try the gnocchi less travelled... gnudi. Gnudi are ricotta-based gnocchi, and are usually made with spinach. However, I forgot to buy spinach and thought I'd use up some of my bumper crop of basil. These are delicate, delicious, and surprisingly easy. The recipe is very forgiving. The basil is intense and wonderful with these little cheese dumplings. I used a mix of both Genovese and Amethyst basil and the results were purple and green! Serve with butter, pesto, or chopped fresh tomatoes, capers, and olives as either a main course or a side dish
