My mom made peanut butter eggs at Easter for many years. She would put our names on them in frosting and decorate them with bunnies and flowers. You can make smaller eggs if desired. These chocolate treats bring back wonderful memories!
Ingredients
- 1 package confectioners' sugar , 16 ounce
- 1 cup creamy peanut butter
- 0.25 cups unsalted butter , softened
- 1 tablespoon milk
- 8 squaress semisweet chocolate , 1 ounce
- 1 tablespoon shortening
Instructions
-
1
Beat confectioners' sugar, peanut butter, and butter in a large mixing bowl until well blended; mix in milk if needed for moisture. Divide mixture in half and form into two large eggs (or smaller eggs if you prefer). Place eggs onto on a wax paper-lined plate and freeze until firm, about 1 hour.

When eggs are almost ready, combine chocolate and shortening in the top of a double boiler over simmering water. Melt over medium heat, stirring frequently until smooth. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.

Remove eggs from the freezer. Carefully stick a long-tined fork in the top of an egg; gently dip it in melted chocolate until covered, then return it to the waxed paper. Repeat to dip remaining egg. Decorate chocolate eggs as desired.

'Momma Made Em' Chicken and Sausage Gumbo
Straight from my mom's kitchen in St. Charles Parish, Louisiana! Chicken, sausage, and okra gumbo that warms the soul.
Puerto Rican Sancocho
Sancocho is Puerto Rican comfort food! This is my mom's recipe that she serves with bread to soak up the delicious flavor. The mix of vegetables and herbs in this stew was influenced by Spanish Canary Island ancestors of some Puerto Rican families, then adjusted to the vegetables available in Puerto Rico, such as corn, pumpkin, and plantains.
Fire Roasted Vegetarian Gumbo
The smokiness from the paprika, roasted peppers, and tomatoes takes the place of andouille sausage in this vegetarian gumbo. With a lot of spice and flavor, this gumbo is a great way to warm up on a cold winter's night.
