I created this chicken brine after experimenting for several years. This brine will add a ton of flavor and will ensure the chicken stays moist as it's cooked.
Ingredients
- 16 cups water
- 0.75 cups kosher salt
- 0.67 cups white sugar
- 0.25 cups dried sage , or to taste
- 0.25 cups dried basil , or to taste
- 2 heads garlic , crushed and chopped
- 1 tablespoon whole black peppercorns
- 1 large bay leaf
Instructions
-
1
Bring water, kosher salt, sugar, sage, basil, garlic, peppercorns, and bay leaf to a simmer in a large pot over medium-high heat; cook, stirring occasionally, until salt and sugar dissolve completely, about 20 minutes.
-
2
Remove from heat; cover and let steep for 20 to 30 minutes. Set pot in an ice bath and stir occasionally until brine cools to room temperature, 20 to 30 minutes. Refrigerate until fully chilled before using, at least 1 hour.

Chocolate Gelato
This gelato is a super chocolaty Italian-style ice cream. Using the best ingredients possible really makes a difference. I use 70% chocolate in it.
Easy Sausage Manicotti Bake
This easy sausage manicotti bake is everything you love about slow-cooked Italian comfort food, but made convenient and fast enough for a weeknight supper using jarred Alfredo and marinara sauces, pre-cooked Italian chicken sausage, and string cheese.
Chicken Thigh Chili
The basis of this came from a chicken-chili soup on this site. I altered it enough (I didn't want a soup) that I couldn't rate the original and decided to share this recipe. Top with sour cream, sliced green onion, and shredded cheese.
