This pineapple pecan cake comes out extremely moist and yummy and is a snap to whip up. It is especially good when topped with cream cheese frosting.
Ingredients
- 2 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda
- 2 large eggs , beaten
- 1 can crushed pineapple , 15 ounce
- 1 teaspoon vanilla extract
- 1 cup chopped pecans

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.

Sift together flour, sugar, and baking soda. Stir in eggs, pineapple, and vanilla, mixing until blended. Fold in pecans. Pour batter into the prepared pan.

Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 35 minutes. Allow to cool.
