Pink lemonade jello shots, chilled in hollowed-out lemon peels and cut into wedges, are fun and festive, and a little bit fancy.
Ingredients
- 6 lemons
- 2 , 1 ounce
- 1 cup pink lemonade
- 0.5 cups lemon vodka
- 0.5 cups vodka
- sanding sugar
- edible glitter powder
Instructions
-
1
Cut lemons into halves lengthwise. Use a paring knife to loosen the pith from the rind and carefully remove the insides from lemon halves; reserve the hollowed peels.
-
2
Add pink lemonade to a small sauce pan over medium heat, and stir in gelatin; heat just until gelatin is completely dissolved, about 5 minutes.
-
3
Add pink lemonade mixture, vodka, and lemon vodka to a bowl and stir to combine.
-
4
Place lemon peel halves onto a plate or small rimmed baking sheet, side by side, to ensure they stay upright. Secure lemons with foil or ramekins as needed to hold them upright.
-
5
Carefully pour pink lemonade mixture into lemon peels, filling each one to the top.
-
6
Place filled lemons into the refrigerator and chill until firmly set, at least 3 hours.
-
7
Slice lemons into wedges; keep chilled until ready to serve. Sprinkle with sanding sugar and edible glitter before serving.

Fried Bass
I made this while camping. It was a break at camp when nobody was there, so I picked up some worms at the trading post and went off to fish down at the lake. I caught 12 bass with the help of my dad, who came down there after he played guitar at the trading post. It was 7:00 when I brought them all back to camp and thought to eat them since everyone already ate dinner while I was gone. So I fried them up in some crushed chips leftover from lunch. Yum, yum, yum.
Spicy Pressure Cooker Short Ribs
Cooking ribs in the pressure cooker is an easy and fast way to put food on your plate. The heat from this dish is countered very nicely with the sweetness. If you like spicy food, then you will love this recipe! If you aren't too tolerant of spicy foods, I included a slight variation in the notes. Enjoy!
